Ingredients
1 1/2 pounds deboned chicken thighs, cut into small pieces
2 tbsp curry powder
2 tsp garlic powder
1/3 cup of coconut oil
1 pound cauliflower, chopped
1 large green bell pepper, chopped
14 oz coconut milk
salt and pepper to taste
1/4 cup of fresh cilantro (or fresh parsley as an alternative)
Directions
- Heat up the coconut oil in a wok pan or a large skillet. Add the curry powder and the garlic and fry for about a minute until they release all the flavors.
- Add the chicken pieces and season them with salt and black pepper. – Sauté for 5 min. Stir often until all the pieces become golden brown and are cooked through. Remove from the pan; keep warm.
- Add the chopped bell pepper and cauliflower and fry them over medium-high heat for several minutes.
- Add the milk and let it simmer for 5 to 10 minutes. Add some salt and black pepper to taste. Put the fried chicken back in the stew, on top.
- Sprinkle chopped cilantro on top and serve.
