Ingredients
6 jalapeno peppers, halved lengthwise
1/2 cup of cauliflower florets
1/2 cup of raw cashews, soak them overnight
2 tbsp olive oil
1/4 cup cheddar cheese, shredded
Black pepper and salt to taste
Directions
- Preheat the oven to 400 F.
- Place a parchment paper on a baking tray
- Blend the florets and squeeze any excess water.
- Add the cashews to the florets and blend. Now add the olive oil. Blend again to create a thick sauce.
- Place the peppers on the baking tray and stuff them with the sauce. Sprinkle cheddar cheese on top.
- Bake 30 minutes.
- Garnish and serve.
