Steamed Mussels With Garlic and Thyme

Paired with fresh thyme and a heaping serving of garlic, these flavorful morsels are perfect for an appetizer or a main course. Ingredients
4 pounds live mussels, cleaned, scrubbed, and debearded
1/2 cup butter
3 tbsp olive oil
1/2 cup diced onion
4 garlic cloves, minced
1/2 cup diced tomato
1 tbsp fresh thyme
1/2 cup white wine
1 cup chicken or seafood broth
2 tbsp freshly squeezed lemon juice
1/2 tsp salt
1/4 tsp freshly ground black pepper
Directions
- Place the cleaned mussels in a large bowl. Cover with cool water. Set aside.
- In a large, heavy pot over medium heat, heat the butter and olive oil for about 1 minute. Add the onions. Cook for 3 to 5 minutes, until translucent. Add the garlic and cook for 1 to 2 minutes more.
- Add the tomato, thyme, white wine, broth, lemon juice, salt, and pepper. Increase the heat and bring the mixture to a boil.
- Add the mussels and cover the pot. Cook for 8 to 10 minutes, shaking the pot at various intervals to allow the mussels to cook evenly.
- Pour the steaming mussels into a bowl. Discard any that are unopened. Serve immediately.
