The way to any Italian-American’s heart is through a plate of inauthentic but totally delicious chicken Parmesan. Bake a batch of these crowd-pleasers as hors d’oeuvres and win over all your guests. Or serve for dinner with Rhode Island Red Marinara Sauce and zucchini noodles.

Ingredients

  • 1 pound free-range ground chicken

  • 1 large free-range egg, lightly beaten

  • 1 cup freshly grated organic Parmesan cheese

  • 3/4 cup shredded organic mozzarella cheese

  • 1/4 cup organic cream cheese, at room temperature

  • 2 tbsp water

  • 3 garlic cloves, minced

  • 1 tsp onion powder

  • 1/2 tsp Italian seasoning

  • 1/2 tsp sea salt

  • 1/2 tsp freshly ground black pepper

  • 8 slices organic provolone cheese, cut into strips

Directions

  • Preheat the oven to 450°F.
  • Line a baking pan with parchment paper.
  • In a large bowl, combine the chicken, egg, Parmesan and mozzarella cheeses, cream cheese, water, garlic, onion powder, Italian seasoning, salt, and pepper. Use your hands to mix the ingredients well.
  • Form the mixture into about 20 meatballs, placing them in the baking pan as you do.
  • Bake the meatballs until they reach an internal temperature of 165°F, about 18 minutes.
  • Remove the pan from the oven and turn the oven to broil.
  • Place the strips of provolone over the meatballs. Place them under the broiler until the cheese bubbles, 3 to 5 minutes. Serve hot.
