You can do almost anything with cauliflower on the keto diet. It’s capable of substituting for pasta, rice, and pizza crust. In this recipe, cauliflower is paired with cheese as a binder to create a well-textured crust for a basic pizza.

Ingredients

  • FOR THE CRUST:

  • 3/4 tsp salt, divided

  • 2 cups cauliflower florets

  • 1 egg

  • 2 1/2 cups shredded mozzarella cheese, divided

  • 1/2 tsp garlic powder

  • 1/8 tsp freshly ground black pepper

  • FOR THE PIZZA:

  • 1/4 cup sugar-free pizza sauce, divided

  • 10 pepperoni slices, divided

Directions

  • TO MAKE THE CRUST: Preheat the oven to 450°F.
  • Bring a large pot of water to a boil. Season with ½ teaspoon of salt. Carefully drop the cauliflower into the boiling water. Cook for 8 minutes. Drain thoroughly, using paper towels to soak up any excess moisture.
  • Place the drained cauliflower into a food processor. Pulse for 1 minute until the cauliflower is “riced.”
  • Transfer the cauliflower to a large bowl. Add the egg, 1 cup of mozzarella cheese, the garlic powder, the remaining ¼ teaspoon of salt, and pepper. Stir until the cheese is fully blended.
  • Separate the cauliflower dough into two equal balls.
  • On a parchment-lined baking sheet, spread each ball into an 8-inch crust. The crust should be very thin.
  • Place the crusts in the preheated oven. Bake for 15 to 20 minutes, or until browned. The edges of the crust should almost be burned.
  • Remove the crusts from the oven. Turn the oven to broil.
  • TO MAKE THE PIZZA: Spread 1/8 cup of pizza sauce over each crust.
  • Top each crust with ¾ cup of mozzarella cheese and half the pepperoni.
  • Return the sheet to the oven. Bake the pizzas for 2 to 3 minutes, or until the cheese is melted and bubbling.
  • Remove the sheet from the oven and allow the pizzas to cool for 3 to 5 minutes before slicing and serving.
