Ingredients

  • 3 cups cauliflower florets

  • 6 tbsp butter

  • 4 tbsp grated Parmesan cheese

  • 2 tbsp sour cream

  • 2 tbsp cream cheese

  • 2 tbsp heavy (whipping) cream

  • 1 tsp minced garlic

  • 1 tsp salt

  • 1/2 tsp freshly ground black pepper

Directions

  • Bring a large pot of water to a rolling boil. Add the cauliflower florets. Cook for 4 to 5 minutes. Drain the cooked cauliflower, pressing out any excess moisture.
  • In the bowl of a food processor, combine the cauliflower florets, butter, Parmesan cheese, sour cream, cream cheese, heavy cream, garlic, salt, and pepper.
  • Pulse to combine and mix until smooth.
