Try this simple crustless, spinach, meat, and cheese quiche. It’s easy to make ahead of time for guests. The fresh ingredients make a it a winner for a delicious and satisfying weekend brunch staple. It’s keto-friendly and will fill you up so it’s easier to stay in ketosis maintaining your healthy weight.

Ingredients

  • 6 large eggs

  • 1 1/2 cups of cream

  • Salt & Pepper to taste

  • 2 cups , freshly chopped spinach

  • 10 grape tomatoes cut in half

  • 1 pound breakfast meat (bacon, or crumbled sausage)

  • 1 1/2 cups of cheese (your choice – swiss, jalapeno jack, cheddar)

  • 1 (9-inch, pie plate)

Directions

  • Preheat oven to 375 degrees
  • Combine eggs, cream, salt and pepper – whisk in bowl.
  • Coat bottom of pie plate with butter or oil
  • Layer the spinach, meat, and cheese in the bottom of the pie plate
  • Pour the egg mixture over top
  • Bake for 35 – 40 minutes, until egg mixture is set, top will be slightly brown. Cut into 8 servings.
