Ingredients
6 large eggs
1 1/2 cups of cream
Salt & Pepper to taste
2 cups , freshly chopped spinach
10 grape tomatoes cut in half
1 pound breakfast meat (bacon, or crumbled sausage)
1 1/2 cups of cheese (your choice – swiss, jalapeno jack, cheddar)
1 (9-inch, pie plate)
Directions
- Preheat oven to 375 degrees
- Combine eggs, cream, salt and pepper – whisk in bowl.
- Coat bottom of pie plate with butter or oil
- Layer the spinach, meat, and cheese in the bottom of the pie plate
- Pour the egg mixture over top
- Bake for 35 – 40 minutes, until egg mixture is set, top will be slightly brown. Cut into 8 servings.
