Cheesy Pork Rind Nachos
Though tortilla chips are nowhere to be found on the keto diet, you can still enjoy nachos with the crunchy, salty flavor of pork rinds. Serving as the base for just about any type of nacho you can think of, this basic cheese recipe can be built on with your keto favorites. For a spicy kick, try pickled jalapeños.
1½ ounces pork rinds
1/3 cup shredded Mexican cheese blend
1/8 cup diced tomato
1 garlic clove, minced
1/4 teaspoon cumin
1/8 cup sour cream
Fresh cilantro for garnish

Step 1Arrange the pork rinds on a large microwaveable plate, being careful not to overlap them.
Step 2Sprinkle the cheese evenly over all the pork rinds, covering each one to the edges.
Step 3Top with the tomatoes and garlic. Season with the cumin.
Step 4Place the plate in a microwave. Cook on high for 1 minute, 15 seconds. Check to see if the cheese has melted. If needed, cook for another 15 to 30 seconds, checking frequently. Make sure not to overcook, or the pork rinds will become soggy.
Step 5Remove the plate from the microwave. Garnish the nachos with sour cream and cilantro. Serve.
