Meatloaf is a staple food that many people grew up with, but that was a different breed of meatloaf entirely. Although meatloaf is usually bulked up with oats or bread crumbs, this recipe relies on zucchini and added fat from bacon to achieve the same texture. Serve a slice of this meatloaf with some Cauliflower Mash for a hearty and heartwarming meal.
1 pound 80-percent lean ground beef
½ pound bacon, chopped
1 zucchini, finely chopped
1 onion, finely chopped
3 tablespoons tomato paste
1 tablespoon Dijon mustard
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1¼ cups almond flour

Step 1Preheat the oven to 350°F.
Step 2In a large bowl, combine the ground beef, bacon, zucchini, and onion.
Step 3Add the tomato paste, eggs, mustard, paprika, salt, and pepper. Mix thoroughly to combine.
Step 4Add the almond flour and mix again, making sure there are no clumps.
Step 5Transfer the beef mixture to a loaf pan coated with cooking spray. Cover with aluminum foil and place in the preheated oven. Cook for 1 hour.
Step 6Take the loaf from the oven and remove the foil. Return the loaf to the oven.
Step 7Increase the heat to broil. Cook for 10 minutes, or until the top is browned.
Step 8Remove the pan from the oven. Allow the meatloaf to cool in the pan for 5 minutes.
Step 9Run a knife along the side edges of the pan to remove the meatloaf.
Step 10Slice into 7 equal slices and serve.
