Lasagna is delicious any time of the year, but in the summer fresh zucchini abounds. Find the best selections at your local farmer’s market. Use it to make keto-friendly lasagna. 

Ingredients

  • 2 small zucchini

  • 2 small squash

  • 1 jar favorite marinara sauce

  • 15 oz ricotta cheese

  • 1 lb mozzarella cheese

Directions

  • Heat oven to 425° F.
  • Cut the zucchini and squash length-wise into 1/8-in thick strips.
  • Arrange on a greased baking sheet.
  • Bake 10 minutes, turning once.
  • In greased 9-in x 13-in baking dish, layer zucchini and squash strips with marinara sauce, ricotta cheese, and mozzarella cheese.
  • Reduce oven to 375° F.
  • Bake for 40 minutes or until bubbly.
  • Garnish as desired.
