Waffles With Whipped Cream
While waffles may be hard to replace on the keto diet in terms of crunchiness, they are easy to match when it comes to flavor. This recipe yields a light, flavorful batter that can be adapted to your needs. For a thicker batter, use fewer egg whites.
Ingredients
FOR THE WAFFLES:
Cooking spray for waffle iron
¼ cup coconut flour
¼ cup almond flour
¼ cup flax meal
1 teaspoon baking powder
1 teaspoon stevia, or other sugar substitute
¼ teaspoon cinnamon
¾ cup egg whites (about 3 whites)
4 whole eggs
1 teaspoon pure vanilla extract
FOR THE WHIPPED CREAM:
½ cup heavy (whipping) cream
1 teaspoon stevia, or other sugar substitute
(optional) Add a few drops of Special Oil to help burn stubborn fat

Step 1To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
Step 2Coat with cooking spray.
Step 3In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
Step 4In another medium bowl, beat the egg whites until stiff peaks form.
Step 5Add the whole eggs and vanilla to the dry ingredients. Mix well to combine.
Step 6Gently fold the beaten egg whites into the dry ingredients until fully incorporated. -Pour the batter onto the preheated waffle iron. Cook according to waffle iron directions.
Step 7TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick. -Add the stevia. Continue to whisk until stiff peaks form, about 1 minute more.
Step 8Top the waffles with equal amounts of the whipped cream and serve.

Thank you for your question. I am sorry you are not able to do sugar substitutes. In this case, you can try skipping step and make up with flavor by adding berries on cooked waffles. Hope this helps!
I’m also unable to use sugar substitutes, but recently found monk fruit is ok.
Have you tried monk fruit? Lots of people who can’t tolerate low carb sweeteners can tolerate monk fruit, AND it has no aftertaste. Really. I buy it at Walmart.
Can these waffles be cooked and frozen to save time in the mornings?
Most waffle recipes call for separating the eggs. Adding the yolks to the other ingredients and folding in the whipped whites at the end makes for an airy light batter and improves the overall texture. Wouldn’t that work with this recipe to promote the crispy outside and tender inside that you expect in a waffle?
Does the dietary fiber count against your carbs?
It does not count against your NET Carbs, but does count if you are tracking total carbs instead. Net carbs are calculated by subtracting dietary fiber from total carbs.
