Porky Pig Dinner Frittata
Salty bacon, savory sauce, and spicy Mexican chorizo come together for a dinner dance that celebrates every angle of pork, dressed in eggs.
Ingredients
8 ounces uncured center-cut bacon
8 ounces organic bulk sausage
4 ounces bulk Mexican chorizo
8 large free-range eggs
½ cup organic heavy (whipping) cream
⅓ cup shredded organic Cheddar cheese
2 teaspoons chopped fresh sage leaves
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper

Step 1Preheat the oven to 350°F.
Step 2Heat a 10-inch ovenproof skillet over medium-high heat. Add the bacon and cook until crispy, 3 to 4 minutes per side. Remove the bacon and set aside to cool.
Step 3Add the sausage and chorizo to the bacon fat left in the skillet and cook until browned, stirring to break up any clumps, about 5 minutes. Remove the meat with a slotted spoon and set aside to cool.
Step 4In a medium bowl, gently beat the eggs. Crumble the bacon into the bowl, then add the sausage and chorizo, heavy cream, Cheddar cheese, sage, salt, and pepper. Pour the egg mixture into the skillet.
Step 5Bake until the eggs are set and the top is golden brown, about 18 minutes. Let the frittata sit for a few minutes before slicing.
