Warm, savory and simple keto friendly stew with a creamy curry base. A delicious stew ready in just half an hour.

Ingredients

  • 1 1/2 pounds deboned chicken thighs, cut into small pieces

  • 2 tbsp curry powder

  • 2 tsp garlic powder

  • 1/3 cup of coconut oil

  • 1 pound cauliflower, chopped

  • 1 large green bell pepper, chopped

  • 14 oz coconut milk

  • salt and pepper to taste

  • 1/4 cup of fresh cilantro (or fresh parsley as an alternative)

Directions

  • Heat up the coconut oil in a wok pan or a large skillet. Add the curry powder and the garlic and fry for about a minute until they release all the flavors.
  • Add the chicken pieces and season them with salt and black pepper. – Sauté for 5 min. Stir often until all the pieces become golden brown and are cooked through. Remove from the pan; keep warm.
  • Add the chopped bell pepper and cauliflower and fry them over medium-high heat for several minutes.
  • Add the milk and let it simmer for 5 to 10 minutes. Add some salt and black pepper to taste. Put the fried chicken back in the stew, on top.
  • Sprinkle chopped cilantro on top and serve.
