This recipe for roasted cod with bok choy is a personal favorite. Quick to make with the aluminum-foil steaming method, this dish will impress with little effort. Bok choy is available year-round, but its peak season is winter. If you’re making this dish during other times of the year, substitute a more seasonal vegetable, like broccoli or broccoli raab.

Ingredients

  • 2 (8-ounce) cod fillets

  • 1/4 cup (1/2 stick) butter, thinly sliced

  • 1 tbsp minced garlic

  • 1/2 pound baby bok choy halved lengthwise

  • 1/4 tsp salt

  • 1/4 tsp freshly ground black pepper

Directions

  • Preheat the oven to 400°F.
  • Make a large pouch from aluminum foil and place the cod inside. Top with slices of butter and the garlic, evenly divided.
  • Tuck the bok choy around the fillets. Season with the salt and pepper.
  • Close the pouch with the two ends of the foil meeting at the top, so the butter remains in the pouch.
  • Place the sealed pouches in a baking dish. Put the dish in the preheated oven, and bake for 15 to 20 minutes, depending on the thickness of the fillets.
  • Remove the dish from the oven and check the fillets for doneness.
  • Serve immediately.
