Coffee Rubbed Tuna Steak
Tuna steaks, appropriately named for their meaty flavor and texture, are best cooked rare. This peppery coffee rub adds a deep, smoky flavor to the tuna.
Ingredients
2 (4-ounce) high-quality tuna steaks
Extra-virgin olive oil
3 tablespoons finely ground coffee
1 tablespoon freshly ground black pepper
1 teaspoon sea salt
½ teaspoon ground cinnamon
½ teaspoon chili powder

Step 1Brush the tuna steaks with olive oil.
Step 2In a small bowl, combine the coffee, pepper, salt, cinnamon, and chili powder.
Step 3Sprinkle the coffee mixture over both sides of the tuna steaks and let them rest, bringing them to room temperature, for about 30 minutes.
Step 4Brush the tuna steaks with more olive oil. In a medium skillet, sear the tuna on both sides over high heat until a crust forms and the fish reaches your preferred doneness, 2 to 3 minutes per side for rare. Serve hot.
