Tuna steaks, appropriately named for their meaty flavor and texture, are best cooked rare. This peppery coffee rub adds a deep, smoky flavor to the tuna.

Ingredients

  • 2 (4-ounce) high-quality tuna steaks

  • Extra-virgin olive oil

  • 3 tbsp finely ground coffee

  • 1 tbsp freshly ground black pepper

  • 1 tsp sea salt

  • 1/2 tsp ground cinnamon

  • 1/2 tsp chili powder

Directions

  • Brush the tuna steaks with olive oil.
  • In a small bowl, combine the coffee, pepper, salt, cinnamon, and chili powder.
  • Sprinkle the coffee mixture over both sides of the tuna steaks and let them rest, bringing them to room temperature, for about 30 minutes.
  • Brush the tuna steaks with more olive oil. In a medium skillet, sear the tuna on both sides over high heat until a crust forms and the fish reaches your preferred doneness, 2 to 3 minutes per side for rare. Serve hot.
