Unsweetened coconut flakes wrap around rich cream cheese for these quick and easy truffles. Extremely simple, these can be frozen and thawed as needed or refrigerated in an airtight container. Experiment by adding spices, like cinnamon, for a twist.
8 ounces (1 package) cream cheese, at room temperature
1/2 cup stevia, or other sugar substitute
2 teaspoons coconut extract
1/2 cup unsweetened shredded coconut
Step 1In a medium bowl, mix together the cream cheese, stevia, and coconut extract.
Step 2Scoop into balls, 1 to 2 tablespoons in size. It should yield about 12.
Step 3Roll the balls in the coconut flakes. Chill the truffles for 15 minutes before serving.
