Summer Cobb Salad for One
This "ketofied" cobb salad is perfect for lunches and dinners... healthy but filling! This recipe is for one person, but you can double it for two.
¼ cup rotisserie chicken meat, shredded
1 Hard-boiled egg, chopped
1 ounce cooked bacon
1 ounce crumbled blue cheese
½ avocado sliced
1 tomato, diced
3 ounces salad greens
½ tsp chives Dressing Ingredients:
1/3 cup red wine vinegar
1 tbsp Dijon mustard
2/3 cup extra virgin olive oil
Step 1Shred chicken and place in bowl
Step 2Add chopped egg, bacon, blue cheese, avocado slices, salad greens, chives and toss.
Step 3In a separate bowl or salad dressing container, mix vinegar and olive oil until blended. Drizzle over salad and serve.
