Stuffed Jalapeno Peppers
A creamy and spicy appetizer that won't affect your keto diet. These are the answer to a real keto friendly tasty and simple appetizer.
6 jalapeno peppers, halved lengthwise
½ cup of cauliflower florets
½ cup of raw cashews, soak them overnight
2 tbsp. olive oil
1/4 cup cheddar cheese, shredded
Black pepper and salt to taste

Step 1Preheat the oven to 400 F.
Step 2Place a parchment paper on a baking tray
Step 3Blend the florets and squeeze any excess water.
Step 4Add the cashews to the florets and blend. Now add the olive oil. Blend again to create a thick sauce.
Step 5Place the peppers on the baking tray and stuff them with the sauce. Sprinkle cheddar cheese on top.
Step 6Bake 30 minutes.
Step 7Garnish and serve.
