kcalThese fried avocado wedges are an absolute delight. Crispy and crunchy on the outside, and soft and creamy on the inside, they’re always a hit and can be seasoned in a variety of ways. Dip them in Ranch Dressing for some added flavor.
Ingredients
Oil for frying
1 egg
1 tablespoon heavy (whipping) cream
1 avocado, peeled and pitted
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup shredded Parmesan cheese
1/4 cup pork rinds, ground
1/4 tsp onion powder
1/4 tsp garlic powder
Directions
- Fill a large, deep skillet with about 1½ inches of oil. Preheat the oil to 375°F.
- In a small bowl, create an egg wash by whisking together the egg and heavy cream.
- Cut the avocado into ½-inch-thick slices. Season with the salt and pepper.
- On a medium plate, mix together the Parmesan cheese, pork rinds, onion powder, and garlic powder.
- Dip each avocado slice in the egg wash, drain off the excess, and then dip into the pork rind coating, covering completely.
- Once the oil is hot, slowly drop in the avocado slices a few at a time. Fry for 1 to 2 minutes, or until golden brown. Remove the slices and set aside on paper towels to drain. Repeat with the remaining slices.
- Cool for 1 to 2 minutes before serving.
