These fried avocado wedges are an absolute delight. Crispy and crunchy on the outside, and soft and creamy on the inside, they're always a hit and can be seasoned in a variety of ways. Dip them in Ranch Dressing for some added flavor.
Oil for frying
1 tablespoon heavy (whipping) cream
1 avocado, peeled and pitted
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup shredded Parmesan cheese
¼ cup pork rinds, ground
¼ teaspoon onion powder
¼ teaspoon garlic powder

Step 1Fill a large, deep skillet with about 1½ inches of oil. Preheat the oil to 375°F.
Step 2In a small bowl, create an egg wash by whisking together the egg and heavy cream.
Step 3Cut the avocado into ½-inch-thick slices. Season with the salt and pepper.
Step 4On a medium plate, mix together the Parmesan cheese, pork rinds, onion powder, and garlic powder.
Step 5Dip each avocado slice in the egg wash, drain off the excess, and then dip into the pork rind coating, covering completely.
Step 6Once the oil is hot, slowly drop in the avocado slices a few at a time. Fry for 1 to 2 minutes, or until golden brown. Remove the slices and set aside on paper towels to drain. Repeat with the remaining slices.
Step 7Cool for 1 to 2 minutes before serving.
