Though tortilla chips are nowhere to be found on the keto diet, you can still enjoy nachos with the crunchy, salty flavor of pork rinds. Serving as the base for just about any type of nacho you can think of, this basic cheese recipe can be built on with your keto favorites. For a spicy kick, try pickled jalapeños.

Ingredients

  • 1 1/2 oz pork rinds

  • 1/3 cup shredded Mexican cheese blend

  • 1/8 cup diced tomato

  • 1 garlic clove, minced

  • 1/4 tsp cumin

  • 1/8 cup sour cream

  • Fresh cilantro for garnish

Directions

  • Arrange the pork rinds on a large microwaveable plate, being careful not to overlap them.
  • Sprinkle the cheese evenly over all the pork rinds, covering each one to the edges.
  • Top with the tomatoes and garlic. Season with the cumin.
  • Place the plate in a microwave. Cook on high for 1 minute, 15 seconds. Check to see if the cheese has melted. If needed, cook for another 15 to 30 seconds, checking frequently. Make sure not to overcook, or the pork rinds will become soggy.
  • Remove the plate from the microwave. Garnish the nachos with sour cream and cilantro. Serve.
