While waffles may be hard to replace on the keto diet in terms of crunchiness, they are easy to match when it comes to flavor. This recipe yields a light, flavorful batter that can be adapted to your needs. For a thicker batter, use fewer egg whites.

Ingredients

  • FOR THE WAFFLES:

  • Cooking spray for waffle iron

  • 1/4 cup coconut flour

  • 1/4 cup almond flour

  • 1/4 cup flax meal

  • 1 tsp baking powder

  • 1 tsp stevia, or other sugar substitute

  • 1/4 tsp cinnamon

  • 1/3 cup egg whites (about 3 whites)

  • 4 whole eggs

  • 1 tsp pure vanilla extract

  • FOR THE WHIPPED CREAM:

  • 1/2 cup heavy (whipping) cream

  • 1 tsp stevia, or other sugar substitute

  • (optional) Add a few drops of Special Oil to help burn stubborn fat

Directions

  • To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
  • Coat with cooking spray.
  • In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
  • In another medium bowl, beat the egg whites until stiff peaks form.
  • Add the whole eggs and vanilla to the dry ingredients. Mix well to combine.
  • Gently fold the beaten egg whites into the dry ingredients until fully incorporated.
  • Pour the batter onto the preheated waffle iron. Cook according to waffle iron directions.
  • TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick.
  • Add the stevia. Continue to whisk until stiff peaks form, about 1 minute more.
  • Top the waffles with equal amounts of the whipped cream and serve.
