Ingredients
FOR THE WAFFLES:
Cooking spray for waffle iron
1/4 cup coconut flour
1/4 cup almond flour
1/4 cup flax meal
1 tsp baking powder
1 tsp stevia, or other sugar substitute
1/4 tsp cinnamon
1/3 cup egg whites (about 3 whites)
4 whole eggs
1 tsp pure vanilla extract
FOR THE WHIPPED CREAM:
1/2 cup heavy (whipping) cream
1 tsp stevia, or other sugar substitute
(optional) Add a few drops of Special Oil to help burn stubborn fat
Directions
- To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
- Coat with cooking spray.
- In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
- In another medium bowl, beat the egg whites until stiff peaks form.
- Add the whole eggs and vanilla to the dry ingredients. Mix well to combine.
- Gently fold the beaten egg whites into the dry ingredients until fully incorporated.
- Pour the batter onto the preheated waffle iron. Cook according to waffle iron directions.
- TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick.
- Add the stevia. Continue to whisk until stiff peaks form, about 1 minute more.
- Top the waffles with equal amounts of the whipped cream and serve.
