Sausage and Sage Meatloaf with Orange Zest
Sweet and spicy sausage is married with earthy, fragrant sage in this meatloaf, which is topped with a tart orange zest.
Ingredients
1 pound organic bulk sweet Italian sausage
2 cups crushed pork rinds
2 cups shredded organic mozzarella cheese
3 large free-range eggs, lightly beaten
⅓ cup organic heavy (whipping) cream
2 tablespoons Worcestershire sauce
½ yellow onion, chopped
4 large fresh sage leaves, chopped
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
2 tablespoons grated orange zest

Step 1Preheat the oven to 350°F.
Step 2In a large bowl, combine the sausage, pork rinds, mozzarella cheese, eggs, heavy cream, Worcestershire sauce, onion, sage, garlic powder, onion powder, salt, and pepper. Use your hands to mix the ingredients well. Evenly pack the meatloaf mixture into a 9-by-9-inch baking dish. Sprinkle the orange zest over the top of the meat.
Step 3Bake until cooked through, about 45 minutes. Let sit for 5 minutes, then slice and serve.

not able to get pork rinds or bulk sausage. sausage is only a “pain” and means removing casings but pork rinds? Nope! any suggestions?
