kcalThis variation of a traditional Greek salad is keto-friendly, uses fresh vegetables is healthy and delicious. Feel free to add grilled lamb, chicken or salmon for a heartier meal.
Ingredients
3 kirby cucumbers
6 oz cherry tomatoes
1/4 cup sliced red onion
2/3 cup crumbled feta cheese
black or kalamata olives, as desired
2 tbsp fresh parsley
1 tbsp fresh dill
3 tbsp olive oil
3 tbsp red wine vinegar
salt and pepper to taste
Directions
- Slice cucumbers.
- Cut cherry tomatoes in halves.
- Add cucumbers and tomatoes into a mixing bowl with onion and feta cheese.
- Mix well, add parsley, dill and olives as desired.
- Drizzle with olive oil and red wine vinegar.
- Toss to coat well, salt and pepper to taste.
- Serve.
