This variation of a traditional Greek salad is keto-friendly, uses fresh vegetables is healthy and delicious. Feel free to add grilled lamb, chicken or salmon for a heartier meal.

Ingredients

  • 3 kirby cucumbers

  • 6 oz cherry tomatoes

  • 1/4 cup sliced red onion

  • 2/3 cup crumbled feta cheese

  • black or kalamata olives, as desired

  • 2 tbsp fresh parsley

  • 1 tbsp fresh dill

  • 3 tbsp olive oil

  • 3 tbsp red wine vinegar

  • salt and pepper to taste

Directions

  • Slice cucumbers.
  • Cut cherry tomatoes in halves.
  • Add cucumbers and tomatoes into a mixing bowl with onion and feta cheese.
  • Mix well, add parsley, dill and olives as desired.
  • Drizzle with olive oil and red wine vinegar.
  • Toss to coat well, salt and pepper to taste.
  • Serve.
