Keto – Greek Salad
Delicious and refreshing summer greek salad.
Ingredients
3 kirby cucumbers
6 ounces cherry tomatoes
1/4-cup sliced red onion
2/3 cup crumbled feta cheese
black or kalamata olives, as desired
2 tbsp fresh parsley
1 tbsp fresh dill
3 tbsp olive oil
3 tbsp red wine vinegar
salt and pepper to taste
Directions
Step 1Slice cucumbers
Step 2Cut cherry tomatoes in halves
Step 3Add cucumbers and tomatoes into a mixing bowl with onion and feta cheese
Step 4Mix well, add parsley, dill and olives as desired
Step 5Drizzle with olive oil and red wine vinegar
Step 6Toss to coat well, salt and pepper to taste
Step 7Serve
