Classic Mozzarella Sticks

kcalAlmost straight from my childhood, these classic mozzarella sticks are just as good as the real breaded thing. A key ingredient here is the powdered Parmesan cheese. Since it is powdered, it mimics the adhesive qualities of breading, but without the carbs. Shredded Parmesan will not yield the same crispy exterior. When I’ve had a long day, I like to whip these up right when I come home, and then fry a batch for my favorite weeknight shows. These also freeze well if you prefer to make them in advance.
Ingredients
2 ounces powdered Parmesan cheese
1 tsp Italian seasoning
1 1 egg
5 mozzarella cheese sticks
Oil for frying
Pizza Sauce or Ranch Dressing for serving
Directions
- In a large bowl, combine the powdered Parmesan cheese and Italian seasoning.
- In another bowl, whisk the egg for 1 minute.
- On a cutting board, slice each mozzarella stick crosswise into thirds for 15 pieces total.
- Dip one piece of the mozzarella into the egg and then roll it in the seasoned Parmesan cheese.
- Re-dip the piece of cheese in the egg, and then again in the Parmesan cheese.
- Roll the cheese-covered mozzarella piece between your hands so the coating adheres.
- Repeat with remaining mozzarella pieces.
- Freeze the cheese sticks for at least 1 hour.
- When ready to cook, preheat 1 inch of oil in a large pan to 350°F.
- Place 2 to 3 cheese sticks in the pan at a time, being careful not to overcrowd. Cook for 4 to 6 minutes, turning halfway through.
- Transfer to paper towels to drain.
- Repeat with the remaining pieces.
- Serve with the Pizza Sauce or Ranch Dressing.
