Chocolate Coated Bacon
Salty, crispy bacon is dipped in buttery, melty chocolate for a sweet and savory treat that’s neither breakfast, dinner, nor dessert—but somehow all three.
Ingredients
1 pound uncured center-cut bacon
2 tablespoons Golden Ghee
1 ounce unsweetened chocolate
1 tablespoon Sugar-Free Vanilla Bean Sweetener
1 tablespoon organic heavy (whipping) cream

Step 1Preheat the oven to 400°F.
Step 2Line two rimmed baking sheets with parchment paper.
Step 3Lay out the bacon strips in a single layer on the sheets. Bake the bacon to your desired crispiness, 15 to 20 minutes (no need to flip the bacon midbake). Drain the bacon on paper towels.
Step 4In a small microwave-safe bowl, combine the ghee and chocolate. Microwave for three or four 15-second intervals, stirring between each interval, until the chocolate becomes soft and mixes easily with the ghee. Add the sweetener and heavy cream and mix until smooth.
Step 5Lay out the bacon on a fresh sheet of parchment paper on a baking sheet. Drizzle the chocolate over one-third of each bacon slice. Refrigerate the chocolate-coated bacon for about 5 minutes before serving.
