Cheesy Chicken Parmesan Meatballs
The way to any Italian-American’s heart is through a plate of inauthentic but totally delicious chicken Parmesan. Bake a batch of these crowd-pleasers as hors d’oeuvres and win over all your guests. Or serve for dinner with Rhode Island Red Marinara Sauce and zucchini noodles.
Ingredients
1 pound free-range ground chicken
1 large free-range egg, lightly beaten
1 cup freshly grated organic Parmesan cheese
¾ cup shredded organic mozzarella cheese
¼ cup organic cream cheese, at room temperature
2 tablespoons water
3 garlic cloves, minced
1 teaspoon onion powder
½ teaspoon Italian seasoning
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
8 slices organic provolone cheese, cut into strips

Step 1Preheat the oven to 450°F.
Step 2Line a baking pan with parchment paper.
Step 3In a large bowl, combine the chicken, egg, Parmesan and mozzarella cheeses, cream cheese, water, garlic, onion powder, Italian seasoning, salt, and pepper. Use your hands to mix the ingredients well.
Step 4Form the mixture into about 20 meatballs, placing them in the baking pan as you do.
Step 5Bake the meatballs until they reach an internal temperature of 165°F, about 18 minutes.
Step 6Remove the pan from the oven and turn the oven to broil.
Step 7Place the strips of provolone over the meatballs. Place them under the broiler until the cheese bubbles, 3 to 5 minutes. Serve hot.
