Cauliflower Mac and Cheese
Cauliflower is an extremely versatile vegetable, especially on the keto diet. It can take on many forms and flavors, which makes it the perfect carbohydrate substitute. In this recipe, cauliflower pairs with a rich, creamy cheese sauce that will curb any pasta craving. This recipe was one of the first that I tested when starting keto, and it is an incredibly easy way to develop a love for the lifestyle. My friends beg for this dish when they come over for dinner-it's that good!
Ingredients
1 teaspoon salt, divided
1 head fresh cauliflower, chopped into small florets
1 cup heavy (whipping) cream
1/3 cup cream cheese, cubed
1 cup shredded Cheddar cheese
½ cup shredded mozzarella cheese
½ teaspoon minced garlic
¼ teaspoon freshly ground black pepper
Cooking spray for baking pan
½ cup shredded Parmesan cheese
Tips
COOKING TIP: Save time by microwaving a bag of packaged cauliflower florets (fresh or frozen). If you are substituting bagged cauliflower, use 2½ to 3 cups of florets in this recipe.Directions Preparing:10 minCooking:30 min
Step 1Preheat the oven to 400°F.
Step 2Bring a large pot of water to a boil. Season with ½ teaspoon of salt. Carefully drop the cauliflower into the boiling water and cook for 5 minutes. Drain thoroughly, and place the florets on paper towels to soak up any remaining moisture. Put the cauliflower in a large bowl and set aside.
Step 3To a large skillet over medium heat, add the heavy cream and bring to a simmer. Whisk in the cream cheese until smooth. Add the Cheddar cheese, mozzarella cheese, and garlic. Whisk until the cheeses melt, about 2 minutes.
Step 4Remove the cheese sauce from heat and pour over the cauliflower. Stir to coat the florets evenly. Sprinkle with the remaining ½ teaspoon of salt and the pepper.
Step 5Spray an 8-inch-square baking pan with cooking spray. Transfer the cauliflower mixture to the pan. Top with the Parmesan cheese.
Step 6Place the pan in the preheated oven. Bake for 20 minutes, or until the top is browned.
Step 7Cool for 5 minutes before serving.
