Green Chili Pork Stew

Ingredients
2 pounds pork loin, cubed
2 tsp ground cumin
2 tsp granulated garlic
1 tsp pure chili powder (optional)
2 oz onion, chopped
2 cloves of garlic
1 can of whole Hatch green chilies and the liquid (27 oz can)
3 tbsp oil
2 cups of water
Directions
- Heat the oil in a large frying pan and cook the pork loin until browned.
- Chop the onion and the garlic. Put the chilies from the can in a blender together with the garlic and onion and process until the chilies look like a thick and chunky paste. Add the spices in the frying pan with the pork and stir until it becomes fragrant. Pour the chilies, together with their juice that was in the can, over the pork loin.
- Add the water. Stir and reduce heat to medium-low and then to low. Cover the frying pan, but keep the lid slightly ajar and let it simmer for about 1 – 1 1/2 hours until and the pork becomes tender and the chilies are cooked.
- djust the seasonings. Serve in a bowl over some cauliflower rice and if you want, you can top it with a fried egg (or a poached one).
