6 large eggs
1-1/2 cups of cream
Salt & Pepper to taste
2 cups, freshly chopped spinach
10 grape tomatoes cut in half
1 pound breakfast meat (bacon, or crumbled sausage)
1-1/2 cups of cheese (your choice – swiss, jalapeno jack, cheddar)
1 (9-inch, pie plate)
Step 1Preheat oven to 375 degrees
Step 2Combine eggs, cream, salt and pepper – whisk in bowl.
Step 3Coat bottom of pie plate with butter or oil
Step 4Layer the spinach, meat, and cheese in the bottom of the pie plate
Step 5Pour the egg mixture over top
Step 6Bake for 35 – 40 minutes, until egg mixture is set, top will be slightly brown. Cut into 8 servings.
